2.1. Prepare the Ingredients
- Pork belly: 1 kg
- Pokelsailz salt: 10gr
- Garlic powder: ¼ teaspoon
- Ginger powder: ¼ teaspoon
- Nutmeg powder: ¼ teaspoon
- Marjoram: ¼ teaspoon
- Finely chopped garlic and ginger
- Other spices: table salt, sugar, pepper, etc.
Tools: Oven, ziplock bag, pot, bowl, paper towels, etc.
2.2. Methodology
Preparation of Ingredients
- After purchasing pork belly, wash it with salt and clean water to remove dirt and odor. Then use clean paper towels to pat it dry.
- Note: It is advisable to buy pieces of meat with a balanced ratio of fat and lean meat. The meat should feel firm to the touch, have good elasticity, and no strange odor.

Marinating and Freezing Meat
- Prepare a bowl, add 17g of table salt, 10g of sugar, ¼ teaspoon of pepper, 10g of Pokelsalz salt, garlic powder, ginger powder, nutmeg powder, Marjoram each ¼ teaspoon, and finally some finely chopped ginger and garlic. Then mix all together.
- Use food-grade gloves to rub the freshly mixed mixture all over the surface of the meat. Rub evenly to let the meat absorb the seasoning. Prepare a ziplock bag, put the seasoned meat in, seal tightly. Then put the meat in the refrigerator's cool compartment for about 3 - 4 days.

Note: When putting the meat in the ziplock bag, you must remove all the air inside the bag before sealing it. If you have a vacuum-sealed bag, it's even better. Or if you don't have a ziplock bag, you can also use a clean regular plastic bag. After removing the air, fold the mouth of the bag and use a lighter to heat it to seal the edges together.
