1. Ingredients for Making Natural Multicolored Coconut Jam
– Coconut flesh: 1kg
– Sugar: 500g
– Glutinous rice leaves: 50g
– Purple cabbage: 150g
– Carrot: 300g
– Gac fruit: 100g (flesh and seeds)
– Cocoa powder: 1 teaspoon
– Vanilla
2. How to Make Natural Multicolored Coconut Jam
Step 1: Preparing Ingredients for Making Natural Multicolored Coconut Jam
The first step in making coconut jam is to use a knife to remove the outer brown husk of the coconut. Then, use the knife to cut the coconut into various lengths according to your preference. Rinse the coconut pieces thoroughly with cold water to remove excess coconut oil.

Step 2: Adding Color to Multicolored Coconut Jam
+ Creating Orange-Red Color for Coconut Jam: Split the gac fruit and remove the flesh. Squeeze the flesh with a tablespoon of rice wine and remove the seeds. To extract the gac juice, add a small bowl of filtered water and squeeze, then strain through a sieve.
+ Creating Yellow, Purple, and Green Colors for Coconut Jam: Carrots, purple cabbage, and glutinous rice leaves should be washed thoroughly and finely chopped. Blend each separately with a small bowl of water using a blender.
+ Strain each type of residue through a sieve, keeping the extracted juice separately in individual bowls.
With this method of making multicolored coconut jam, you can choose the colors you like, not necessarily the 5 colors mentioned above. Some other colors such as blue from butterfly pea flowers, pink-purple from purple glutinous rice leaves, brown from coffee,... Therefore, it's not necessary to make multicolored coconut jam; you can make any color you want.
+ Continue to divide the shredded coconut into 5 equal portions, then immerse each portion in the pre-strained vegetable juice and sugar mixture for about 4 - 5 hours in the refrigerator to absorb the color. If possible, you can leave it overnight. The ratio of sugar to coconut can be 1:1 (1 coconut: 1 sugar) or 2: 1 (2 coconut : 1 sugar) depending on your family's preference for sweetness.

Step 3: Roasting Multicolored Coconut
+ Place the pan on the stove with the pre-soaked coconut shreds (pre-roasted). Make sure to keep the heat at medium-low, and when the sugar starts to boil, occasionally stir with a chopstick.
+ When the sugar water starts to evaporate, keep the heat low and continuously stir with a chopstick to evenly crystallize the sugar onto the coconut. If you want the coconut jam to be more fragrant, you can add a few drops of vanilla while stirring, then turn off the stove.
