Trade with Village Leatherworker
If you've amassed a significant amount of emeralds, start searching for a village with a Leatherworker. If you can't find one, you can turn an unemployed villager into a Leatherworker by placing a Leatherworking Table along their path.
Trade extensively with the Leatherworker until they reach the Master level. At this point, you can exchange emeralds for saddles.

Defeat a Ravager
If you're up for some action-packed thrill, you can battle a Ravager to obtain a saddle. First, you need to trigger a raid on a village. Then, powerful mobs will start attacking, and the Ravager will appear as well.

How to Use Saddles in Minecraft
Once you have a saddle, you're ready to ride an animal, but how will you do it?
Horses, donkeys, and llamas

Strider
While riding a pig may seem fun, it's not as useful as riding a Strider (which can walk on lava). In the Nether, where you encounter plenty of lava, riding a Strider helps you move around easily.
Similar to pigs, you first need to attract the attention of a Strider with its favorite food: Warped Fungus (a green mushroom found in Nether forests).

Once the Strider approaches, place the saddle and start mounting it. Hold the Carrot on a Stick with Warped Fungus attached and begin controlling it.

Unfortunately, once you've placed the saddle on a pig or Strider, you can't retrieve it. The only way is to kill them.
