Ingredients for Seafood Glass Noodle Stir-Fry:
Dried glass noodles: 150g
Fresh shrimp: 200g
Squid (tube or leaf): 300g
Shiitake mushrooms: 50g
Carrot: 1 piece
Onion: 1 piece
Dry onion: 1 bulb
Garlic: 1 bulb
Green onions, Vietnamese coriander, cilantro as preferred
Seasonings: cooking oil, seasoning powder, black pepper, oyster sauce
How to Make Seafood Glass Noodle Stir-Fry:

First, soak the dried glass noodles in warm water for about 30 minutes until they soften, then drain and cut into edible lengths.
Soak shiitake mushrooms in warm water until they expand and soften, trim off the stems, wash, drain, and slice into strips.
Clean the herbs and green onions, remove the roots, wash, and cut into suitable lengths.

Peel the carrot, wash and julienne. Peel the onion, wash and slice thinly.
Peel and finely chop the garlic and onions.

Clean the squid with white wine to eliminate any fishy smell, then score the squid's body in a crisscross pattern before cutting it into bite-sized pieces.

Wash the shrimp, peel, devein, and then marinate both the shrimp and squid with a little seasoning powder and half of the chopped garlic and onions, mixing well and letting it marinate for about 15 minutes to fully absorb the flavors.

Heat a pan with some oil, and when the oil is hot, add the minced garlic and onions to sauté until fragrant. Then, add the marinated shrimp and squid to stir-fry on high heat to prevent the squid from releasing water, season to taste, and finally add carrots, shiitake mushrooms, and onions to stir-fry together.

Once all ingredients are cooked, add the glass noodles and stir well. If the pan is dry, add a little water to prevent the noodles from burning. Mix the shrimp, squid, carrots, mushrooms, onions, and noodles thoroughly, seasoning to taste.
For the final touch, add chopped green onions and herbs along with a dash of oyster sauce and some ground pepper to enhance the dish's flavor before turning off the heat. Serve the stir-fry hot with soy sauce on the side.
