Ingredients Needed for Quang Dong Coconut Snails with Black Bean Sauce
- 300g coconut snails
- 2 tablespoons vegetable oil
- 2 teaspoons fresh ginger
- 3 cloves fresh garlic
- ¼ cup shallots
- 1½ tablespoons black bean garlic sauce
- 4 tablespoons Thieu Hung wine or dry sherry
- ½ teaspoon sesame oil
- ¼ teaspoon sugar
- 1 tablespoon dark soy sauce
- 1/8 teaspoon ground black pepper
- 1½ tablespoons cornstarch
- A few stalks of scallions

Steps to Prepare Quang Dong Coconut Snails with Black Bean Sauce
Step 1. Preparing Coconut Snails
Clean the snails thoroughly, then place them in a bowl without water overnight in the refrigerator. The next day, soak them in cold water for 10 minutes and rinse them again. Let them drain.

Step 2. Prepare Other Ingredients
Peel and thinly slice the ginger.
Finely chop the onions and garlic.
Clean and finely chop the scallions.
Mix cornstarch with 3 tablespoons of water, stirring well.

Step 3. Stir-Fry the Snails
Heat the pan, add 2 tablespoons of vegetable oil and 2 tablespoons of finely chopped fresh ginger.

Sauté ginger for 10 seconds to infuse the oil, then add 1 teaspoon of minced garlic, ¼ cup of minced shallots, and 1½ tablespoons of crushed black beans and garlic sauce.

Mix everything together until combined and add the drained coconut snails. Turn the heat to high, add the snails, and stir-fry for 10 seconds.

Add 4 tablespoons of Thieu Hung wine. Continue stirring over high heat for another 15 seconds, then add sesame oil, sugar, soy sauce, and dark soy sauce. Stir and cover with a lid or pan.

Cover and cook for an additional 4 to 5 minutes. When you uncover, the coconut snails and sauce mixture will smoke. Add white pepper.
Next, stir your cornmeal mixture until it combines well. Pour the cornmeal mixture over the coconut snails and quickly stir the creamy mixture with the sauce.

Add scallions and continue to stir for 30 seconds. Transfer to a plate to serve.
