Pork rang chay canh is a tasty and simple dish in Vietnamese family meals. The pork is flavorful, with a crispy outer layer and tender inside, mixed with fatty goodness. Enjoy it with some pickles and pickled vegetables alongside hot rice, it's a real treat. There are many ways to cook crispy pork edges, but not all can make it perfectly. Check out the recipe below!

Ingredients:

- Pork belly: 400g
- 2 dried onions
- 4 cloves of garlic
- 2 teaspoons of sugar
- 3 teaspoons of fish sauce
- 1 teaspoon of seasoning powder
- 1/2 teaspoon of black pepper
How to cook crispy pork edges:
Step 1: Prepare ingredients
- Peel and finely chop dried onions and garlic.
- Clean the meat thoroughly and slice it into thin pieces.
- Mix the prepared seasoning mixture in a bowl.

Step 2: Execution
- Brush a thin layer of oil onto the pan, spread the meat evenly on top, then place it on the stove over medium heat until the meat firms up and all the liquid evaporates.
Pro tip: When flipping, remember to turn the meat evenly to avoid overcooking and drying it out.

- Once the pork edges are crispy, add finely chopped onions and garlic and sauté until fragrant. Pour the pre-mixed fish sauce mixture into the pan, reduce heat to low, stir well until thickened, then turn off the heat.

After the crispy pork edges are done, transfer them to a serving plate for the whole family to enjoy with hot rice. Don't forget to add some pickled vegetables or pickles to enhance the flavors! Making crispy pork edges is both easy and delicious, right? Although crispy pork edges are a simple dish, they are very familiar and popular in Vietnamese family meals. Whether it's a cold or hot day, adding a plate of crispy and flavorful pork edges to the meal will make everyone happily devouring the rice before they even know it.

I usually make crispy pork edges at home to treat my family. However, on special occasions, especially when hosting guests, especially friends or partners from out of town to Hanoi, I usually take them to a restaurant called Hai Cang in Hai Ba Trung district. Although it's a Hong Kong-style restaurant, they still offer many delicious Vietnamese dishes that suit everyone's taste buds, such as braised shrimp with pork, caramelized fish, salt and pepper chicken cartilage, crab soup, rib soup,... Additionally, some exotic dishes also captivate me, such as Roasted Tham Tinh goose - South African abalone - Grilled snow fish - Stir-fried crab with glass noodles - Grilled beef ribs with scallion oil - French duck liver in red wine sauce.

Another plus point here for me is the luxurious space with glass doors all around and a beautiful view. When night falls, the restaurant space shines brightly under the dazzling lights. Beyond the clear glass doors is a sparkling Hanoi, glowing and shimmering like a charming jewel in the night.

Don't forget to book your table in advance through PasGo when visiting Hai Cang to receive surprising offers and secure your preferred seating position!
