

Hẻm Quán's dishes are bursting with authentic flavors, reminiscent of the delicacies from my hometown down south.
This fragrant crispy salt and garlic chicken wings are perfect for a casual drink. Not being the demure type, my friend, who's a savvy businessperson, and I, decided to order an extra plate to accompany our drinks. We spent over 2 hours indulging in Hẻm Quán's three-course feast!

One try is worth a hundred sees!
Of course, my pockets aren't deep enough to frequent Hẻm Quán every time I crave their fried chicken and drinking sessions. So, I ventured into experimenting with their recipe, braving the kitchen to recreate the dish from scratch. Here's my version to share with all the ladies for family dinners or to treat their husbands to a drinking night!
Guide to making savory-sweet garlic fish sauce fried chicken, richly aromatic
Ingredients (for 4 servings, or 2 if hearty eaters):
400g chicken wings (chicken thighs also work if you prefer more meat), 2 tablespoons sugar, 2 tablespoons fish sauce, 2 cloves garlic.
Clean the chicken wings with diluted salt water, pat dry, then microwave for a few minutes. If you don't have a microwave, you can steam or boil the chicken, but boiling might result in loss of natural juices, affecting the meat's succulence and rich flavor. From my analysis, it seems that Hẻm Quán likely roasts their chicken, hence the juicy, tender, flavorful meat inside despite the crispy golden exterior.
Deep-fry the chicken wings in hot oil until they turn golden and crispy, then remove and drain excess oil.

Fry the chicken until golden and crispy.
Finely chop the garlic, sauté until fragrant. Use minimal oil to avoid greasiness, as excessive oil isn't healthy. Once the garlic is fragrant, reduce the heat, add sugar and fish sauce. If you prefer a stronger flavor, you can increase the amount of sugar and fish sauce, but it doesn't have to be exactly 2 tablespoons for every 400g of meat as I suggested, as long as you maintain a 1:1 ratio and adjust to your taste.
Stir well, then turn up the heat, add the fried chicken, shake and toss to evenly coat the chicken with the mixture. When the sugar starts to turn golden, turn off the heat and remove the chicken wings. Don't let the sugar turn completely brown as the wings might become slightly dry then, not as tasty as when the sugar is just beginning to change color. Remember, you need to be quick with this last step because sugar changes color very quickly!

Incredibly fragrant and flavorful dish.
Now take out the chicken meat, it's best served hot in this cool weather of Hanoi!
