Ingredients:
- 1/2 duck
- 1 tablespoon minced turmeric
- 1 tablespoon shrimp paste
- 1 tablespoon minced garlic
- 1 tablespoon minced shallot
- 2 tablespoons finely chopped galangal
- 3 tablespoons tamarind
- 1 fresh coconut
- 1 lime
- Ginger wine
- Lemon balm, kaffir lime leaves
- Seasonings: cooking oil, MSG, broth mix, salt.

Instructions:
Step 1: Clean the duck thoroughly, rub with salt and lime both inside and out, rinse with ginger wine to remove any odor. Grill the duck briefly over charcoal or, if unavailable, use a grilling pan on the gas stove until the skin is slightly charred and fragrant.

Step 2: Cut the duck into bite-sized pieces.

Step 3: Marinate the duck with 1 teaspoon MSG, 1 teaspoon salt, 1 tablespoon minced turmeric, 1 tablespoon shrimp paste, 1/2 tablespoon minced garlic, 1 tablespoon minced shallot, 1 tablespoon finely chopped galangal, 3 tablespoons tamarind water.

Mix the seasoning well to let the duck absorb for about 30 minutes before cooking.

Step 4: Add 1/2 tablespoon minced garlic into the pot when the oil is hot, then add the duck meat and stir-fry.

Once the meat firms up, pour in the coconut water.

Simmer gently until the duck meat is tender.
Step 5: When the water starts to evaporate and turns golden, taste and adjust the seasoning to your liking. Then add 1 tablespoon minced galangal to enhance the distinctive aroma, making the dish even more flavorful.

Finally, add chopped lemon balm and kaffir lime leaves, then turn off the heat.
