Today, PasGo will guide you on how to make delicious grilled blood cockles with fragrant buttered onions. To make this dish tasty, you need to carefully select fresh blood cockles. Choose ones that are still alive, not too big or too small. Fresh blood cockles have tongues protruding out, and the ones with closed mouths may still be fresh, but make sure there is no odor. If the cockles are too small, they may shrink when cooked and not taste good. On the other hand, if they are too large, they may be tough.
+ Spring onions: 50 grams
+ Cooking oil
+ Salt
STEPS TO PREPARE GRILLED BLOOD COCKLE WITH BUTTERY SHALLOTS
Step 1: Preparing the blood cockles

Soak the blood cockles in diluted iodized saltwater for about 5-10 minutes. Use an old toothbrush to scrub and rinse them thoroughly. Drain well.
Step 2: Preparing other ingredients

Peel and rinse the dried shallots, then thinly slice them. Pat them dry and set aside.
Wash the spring onions thoroughly, including the roots, and finely chop them.
Step 3: Preparing the shallot oil

Place a pan on the stove and heat some cooking oil until hot. Then, add the dried shallots and fry until golden brown. Remove the shallots and drain them on paper towels to remove excess oil.

Transfer the fried shallots to a clean pot, bring to a boil, then turn off the heat. Pour the oil into a large bowl, and add the spring onions immediately while the oil is still hot.
Step 4: Grilling the blood cockles

Place the blood cockles on a grilling rack and grill over charcoal until they open up. Drizzle with more oil and the fragrant fried shallots immediately.

Then, transfer the blood cockles onto a plate, sprinkle with more fried shallots, and serve hot.
Note:
For a richer flavor, enhance the onion lard with a pinch of seasoning.
To add richness and aroma to the dish, you can sprinkle some crushed roasted peanuts on the blood cockles.
