I've had my fair share of Italian pasta, but pasta paired with spicy eggplant and tomato sauce was a delightful first at Paris Deli on 6B Phan Chu Trinh. Personally, I found this dish to have a hint of... Indian influence intertwined with Italian flair, perhaps due to the crispy, spicy eggplant offering a tantalizing, irresistible mouthful at Paris Deli.

Scoop up a plate of pasta and savor each bite slowly to fully appreciate the perfect harmony of sweet and tangy tomato sauce coating every slippery, glossy, chewy, and fragrant strand of pasta, enriched with creamy, indulgent cheese. Recipe for Eggplant Pasta with Tomato Sauce (serves 2)
250g Italian pasta, 300g eggplant, 500g canned tomatoes (or 5 – 6 fresh tomatoes, peeled), 1 onion, 1 tablespoon potato starch, 3 tablespoons olive oil, garlic, flour, basil, pepper, salt.
Cook the Italian pasta in a large pot with plenty of water (about 1 liter of water for every 100g of pasta or slightly more). When the water boils, add a pinch of salt (about 5g of salt per liter of water). When the water is vigorously boiling, add the pasta to the pot. It usually takes about 25 – 30 minutes for the pasta to cook through. Once the pasta is cooked, remove it from the pot and rinse it under cold water.

Make sure to use plenty of water to prevent the pasta from sticking together.
Wash the eggplant thoroughly, slice it into thick slices about 0.5 cm thick, sprinkle a little salt on top, then steam it until the eggplant is no longer bitter. Take the eggplant out, wash it clean, pat it dry, then roll it in a little flour, lightly fry it, remove it from the oil, and sprinkle salt and pepper on top.
Blend the tomatoes into a puree. Sauté finely chopped onions with olive oil, then add the tomato puree, basil, and garlic and sauté together. Season with salt and pepper to taste so that it pairs well with the pasta.

Prepare the dried eggplant
Using a hot pan, quickly stir the mixture of tomato sauce and potato starch diluted in water until it thickens. Add the Italian pasta and mix well, then garnish with dried eggplant on top.
Serve it hot for the best taste. For an extra flavorful dish, you can divide the eggplant into two portions, one portion diced and stir-fried with spices to add to the pasta at the last minute, and one portion dried for garnish as mentioned above.

Although this dish can be made quite easily at home, I still prefer to indulge at Paris Deli. Just stepping through the door, the intoxicating aroma of freshly ground coffee and the distinctive blend of cheese, creamy milk, sweet pastry, and Italian pasta instantly lifts my spirits.
Let me also share a little secret: the scent of coffee has the power to boost productivity and concentration, so I often visit Paris Deli to work. It's quiet, with a beautiful view, and the food and drinks are all delicious, making it very convenient!
