Preparing the Ingredients
- Beef sirloin: 300g
- Pork bones: 1kg
- Tofu: 100g
- Shiitake mushrooms: 200g
- Sausage: 1 pack
- Kimchi: 500g
- Lemongrass: 2 stalks
- Shallots: 50g
- Ginger: 3 stalks
- Garlic: 2 bulbs
- Seasonings: cooking oil, soy sauce, fish sauce, chili paste, salt, sugar, broth mix, chili powder.

Processing Steps
Step 1: Prepare Ingredients
Soak the beef sirloin in salt to remove any odor, then rinse with cold water and drain. Cut the beef into thin slices. Soak the pork bones in salted water for about 30 minutes to remove impurities. Then rinse with cold water and blanch for about 2 minutes, then remove and drain.
Clean the tofu, cut into square pieces. Slice the sausage diagonally about 1 - 2 cm thick. Soak the shiitake mushrooms in diluted salt for 10 minutes. Then remove and drain, slice into bite-sized pieces. Trim the lemongrass, wash, remove the root, and crush lightly. Peel and finely chop the garlic. Wash and cut the onions and lemongrass into segments. Peel and halve the shallots.

Step 2: Cook the Hotpot Broth
Add cleaned pork bones and 5 liters of water into a pot, add a bit of salt and rock sugar. Simmer the bones for 1 hour then remove. Skim off any impurities while simmering.
Heat the pot and add some cooking oil. Sauté 2 crushed lemongrass stalks and minced garlic until fragrant, then add the segmented onions to stir-fry together.
Next, add the simmered bone broth to the pot. Season with 1 tablespoon chili powder, sliced onions, 70ml fish sauce, 70ml soy sauce, 1 tablespoon broth mix, 1 tablespoon sugar, 1/4 tablespoon salt, 1/2 tablespoon chili paste to enhance the flavor of the hotpot. Once the broth is boiling, add the kimchi and simmer for an additional 15 minutes to complete.

Step 3: Completion
Arrange the beef sirloin, tofu, sausage, shiitake mushrooms (and other prepared toppings) on plates. Place the hotpot on an electric or gas stove over low heat, then gradually add the toppings to the hotpot and enjoy with friends and family.
