- 300 grams of chicken meat, either chicken breast or chicken thigh
- 3 to 4 shiitake mushrooms (also known as Chinese black mushrooms)

- 2 egg whites
- 2 tablespoons of cornstarch (or corn flour)
- Salt, pepper, seasoning powder, sesame oil
- Coriander leaves
- Dried shallots

Instructions:
- Rinse the chicken thigh meat with diluted salt water, then immerse it in cold water. Bring to a boil, occasionally skimming off any foam to clarify the broth.

- Soak the shiitake mushrooms until they expand.

- Beat the egg whites until frothy.

- Mix two tablespoons of cornstarch with about three tablespoons of water, stirring well to dissolve the cornstarch.
