Crepe has always been one of those desserts that captivate hearts with its sweet, tender taste as you bite into the first layer.
Next comes the delightful combination of creamy filling and fruit - here, the durian is truly fragrant, sweet, and light as a summer breeze.
A simple twist by adding pandan leaves to give the crepe shell a vibrant green color, making the traditional crepe more eye-catching and exciting.
Ingredients for Durian and Pandan Crepe:
- 20g butter
- 210ml fresh milk
- 1 egg yolk
- 65g all-purpose flour
- 25g sugar
- 150ml heavy cream (whipping cream)
- 20g sugar
- 1 teaspoon vanilla extract
- 100g durian
- 10ml pandan extract
How to Make Durian and Pandan Crepe:
Step 1:
Take a small saucepan, add fresh milk, sugar, and butter, then stir well. Place the saucepan on the stove and heat over medium heat. Stir until the butter and sugar are completely melted. Then, turn off the heat and let it cool.
Step 2:
Take a large mixing bowl, add flour, crack in the egg, then pour in the mixture of butter, milk, and sugar prepared in step 1. Mix everything well by hand.
Divide the flour into 2 portions, add pandan extract to one portion for a green crust, leave the other portion as is for a light yellow crust to make it visually appealing.
Note: to ensure smooth flour without lumps, remember to sift it before adding to the bowl.

Step 3: Making the crust
- Place a non-stick pan on the stove, add about 1/2 teaspoon of cooking oil, use a paper towel to evenly spread the oil all over the pan. Make sure there is only a thin layer of oil on the pan.
- Now, heat the pan on the stove, use a spoon to scoop a small amount of batter to spread into a thin layer on the pan. Once the batter is cooked and the surface is dry, remove it and stack the crepes on a plate.
- Repeat until all the batter is used up.
Step 4: Making the filling
- Peel and deseed the durian, then mash the flesh until smooth.
- Add fresh cream, sugar, and vanilla into a mixing bowl, then whisk until smooth.

Step 5: Assembling the crepes
Once the crepe shells have cooled down, lay them out on a plate, spread a layer of filling - a portion of durian and a portion of cream - in the middle, then fold them up.
Finally, arrange them nicely on a plate for presentation.

Congratulations! You've completed this seemingly challenging but actually incredibly simple Crepe recipe.
Enjoy your meal!
