Steps for preparation
Step 1: Preparing the ingredients
Clean the beef brisket and beef ribs by rubbing them with a mixture of vinegar and salt, then rinse with clean water. Cut the beef brisket into small pieces, chop the beef ribs into bite-sized chunks.
Continue preparing other ingredients: peel and wash the taro, then cut it into pieces about 1-2cm in size. Wash and slice the tofu into thin square pieces. Bruise the lemongrass and shallots. Peel and section the onions. Scrape and wash the ginger, then slice it thinly. Pick and wash the side vegetables thoroughly.

Step 2: Boil the hotpot broth
Heat a pot on the stove until hot, add cooking oil, lemongrass, shallots, and ginger and sauté until fragrant. Then reduce the heat, wait until the ingredients turn golden and emit a fragrant smell, then turn off the heat and transfer to a small bowl.
Next, add about 2 liters of water (you can add more or less depending on the number of people) along with a pinch of salt. Turn up the heat and wait for the water to boil, then add the pre-prepared beef and beef ribs along with onions to the pot. Then add the hotpot seasoning packet and the previously sautéed ingredients.
Simmer for about 30 minutes until the pork ribs and other ingredients are tender and the flavors meld together, then adjust the seasoning to taste. Turn off the heat. Add the chili sauce packet to the hot pot to give it a more enticing spicy kick.

3. Arrange the hot pot and dipping ingredients
After turning off the heat, prepare the hot pot along with an electric cooker or induction stove. Pour the hot pot broth into the pot and turn the heat to 300°C to bring it back to a boil. When ready to eat, start by adding thinly sliced beef, assorted vegetables, tofu, and shiitake mushrooms. To enhance the flavor of the meat and vegetables, prepare a dipping sauce with lime and chili or garlic soy sauce.
While enjoying your meal, if the hot pot broth runs low, consider concocting a revitalizing blend using the already simmered broth, adding extra seasonings or chili sauce for an extra kick.
