2 Ways to Make Jelly Flan Mooncakes
While making jelly flan mooncakes may seem simple, creating this enticing and novel treat requires following the steps below:
Step 1: Cooking the Jelly
Start by adding 2.5 liters of water, 300 grams of caster sugar, and 1/6 teaspoon of salt to a pot. Place the pot on the stove and simmer over low heat until the sugar dissolves. Mix jelly powder with 500 ml of filtered water until smooth. Once the sugar water mixture boils, add the jelly mixture. Continue simmering over low heat.
Step 2: Cooking Matcha Jelly and Pouring the First Layer into Molds
Mix 10 grams of matcha powder with 100 ml of fresh milk. Strain the mixture through a fine cloth to remove any lumps of matcha. Add half a can of condensed milk to the mixture and stir well. When the jelly mixture boils, use a ladle to scoop about 500 ml and mix it with the matcha powder, stirring well. Pour a thin layer of matcha jelly into the bottom of the molds. Continue pouring until all molds are filled.

Step 3: Cooking Condensed Milk Jelly and Pouring the Second Layer into Molds
Take another 500 ml of jelly water into a bowl, then add half a can of condensed milk, and mix well. When the matcha jelly layer sets slightly, gently poke the surface with a fork, then pour the condensed milk jelly layer on top. Continue pouring until all molds are filled. Using a fork to puncture the slightly set jelly layer helps the layers adhere to each other.
Step 4: Adding Flan to Jelly Molds
Remove the flan from its container, and gently pat dry with paper towels to remove excess syrup. This step prevents the jelly from leaking when it sets. When the second jelly layer is slightly firm, gently poke with a fork, then place the flan on top. Arrange flan in all molds.
Step 5: Cooking Matcha Mixture and Pouring into Molds
Prepare the matcha jelly mixture as per the recipe in step 2. Pour the prepared matcha jelly mixture into the molds (the jelly layer will cover the flan). Continue pouring until all molds are filled. You have now completed making jelly flan mooncakes.
