Ingredients:
- White Glutinous Rice: 200g (or dried rice crackers)
- Fresh Catfish: 300g
- Basil, chili, peppercorns, seasoning powder, cooking oil, chili sauce, fish sauce

Instructions for Crispy Fish Sausage Rice:
Step 1:
- For thì là, remove the roots and yellowed leaves, then wash thoroughly and let drain.
- Wash the chili, cut along the stem, and remove the seeds.
- For the catfish, wash it thoroughly and cut it into small pieces.
- Blend thì là, ớt, and catfish in a blender until smooth. If you prefer a milder taste, you can separately blend thì là and ớt, finely chop them, and then mix all the ingredients together.

- Add 1 teaspoon of peppercorns, 1 teaspoon of seasoning powder, 1 teaspoon of cooking oil, and 1 tablespoon of fish sauce to the blended fish sausage mixture.
Step 2:
- Shape the white glutinous rice into round, flat balls with a diameter of about 2.5 - 3cm. If using dried rice crackers, cut them into similar-sized round pieces and lightly fry to puff them up.
- Wear round nylon gloves, wrap each fish sausage ball onto a piece of glutinous rice, ensuring a snug fit. Repeat until all fish sausages are used.

- Heat a pan, add enough cooking oil to deep-fry the fish sausage-covered rice balls. Once the oil is hot, fry the rice and fish sausages until golden brown. Then, transfer them to a plate lined with paper towels to absorb excess oil.

These fried fish sausage rice bites are best enjoyed hot with chili sauce or a hint of sourness. The sweet and chewy catfish, the spiciness of peppercorns and chili, combined with the aromatic basil, blend perfectly with the crispy rice underneath, surely enticing your whole family.
More than just a delicious dish, crispy fish sausage rice also packs a nutritional punch. Catfish, with its sweet and mild flavor, nourishes blood, supports kidney health, strengthens yang, dispels wind-cold, and alleviates pain. With its high nutritional value and numerous health benefits, catfish is a wise choice for preparing a tasty and nutritious meal.
