Ingredients (Suitable for 3 servings)
- Razor clams: 6-8 pieces (Approximately 1-1.5kg)
- Dried shallots: 3 bulbs
- Cooking oil: 2 tablespoons
- Lemongrass: 3 stalks
- Sugar: 1-2 teaspoons
- Peanuts: 100g
- Herbs: cilantro, Vietnamese coriander, basil (As needed)
How to make grilled razor clams with scallion lard

Step 1
After purchasing razor clams, clean them thoroughly, soak in salt water for 15 minutes to remove sand, then drain.
Clean the lemongrass, cut into 4-5 cm pieces.
Roast peanuts until golden, remove shells, lightly crush (Note: Do not grind the peanuts, just lightly crush them to break the kernels)
Place razor clams in a pot, then add lemongrass and ½ bowl of filtered water. Cover the pot tightly, simmer for about 5-8 minutes until the clams open their mouths, then continue to simmer for another 3-4 minutes (Note: Do not simmer for too long as overcooked clams will affect the taste of the dish).

Step 2
Remove the clams, clean the shells, and cut the clam meat into 4 pieces each (As shown in the image).

Step 3
Peel the dried shallots, thinly slice the leaves (Note: Do not chop finely as it does not suit this dish).
Add 2 tablespoons of cooking oil to a hot pan, then add the shallots and stir-fry until fragrant. Stir constantly until the shallots turn golden brown, then add 1-2 teaspoons of sugar and continue stirring (Note: Shallots can easily burn, so you need to stir constantly and quickly turn off the heat when the shallots turn golden brown).

Step 4
Use a spoon to scoop the shallots and lard over the clams.
Place the razor clams in the microwave or grill for 3-5 minutes. Sprinkle crushed peanuts over the clams when serving to enhance the flavor.
