Ingredients:
- 900 grams of chicken breast
- ½ cup of Korean-style finely shredded chili powder (available at supermarkets)
- 30-45 grams of Korean chili paste (available at supermarkets)
- 15ml of soy sauce
- 45ml of vegetable oil
- 2.5 grams of black peppercorns
- 60ml of rice syrup (if unavailable, substitute with honey or sugar)
- 6 cloves of garlic - 10 grams of ginger
- 450 grams of mozzarella cheese
- 1 bunch of green onions
- 60ml of water
- 1 bowl of Korean rice cakes (optional – available at supermarkets)
How to Make Korean Spicy Cheese Chicken:

- Clean and cut the chicken breast into 2.5cm square pieces
- Peel and finely chop the garlic, wash and peel the ginger then finely chop it. Wash the green onions and finely slice them.
- Thinly slice the Korean rice cakes.

- Cut the mozzarella cheese into small pieces as well.
- Next, mix together the chili powder, chili paste, soy sauce, 30ml of vegetable oil, black peppercorns, garlic, rice syrup, and ginger in a bowl.

- Then add the sliced chicken to the sauce mixture and mix thoroughly with your hands.

- Heat a pan with 15ml of vegetable oil and fry the rice cakes for a few minutes.

- Add the chicken mixture to the pan, cover, and cook on high heat for 10 minutes (if using a regular frying pan, it will take about 7-8 minutes).

- Use a wooden spoon to stir evenly, then place the rice cakes on top of the chicken and reduce the heat to the lowest setting. Cover and simmer for another 10 minutes or until the chicken is fully cooked.

- While cooking the chicken, preheat the oven to medium heat. Once the chicken is cooked, spread the mozzarella cheese on top of the chicken, place the pan in the oven for a few minutes until the cheese is melted and bubbly. Finally, sprinkle green onions on top before serving.

- If you don't have an oven, you can place the cheese on top of the pan with the chicken, cover, and continue cooking for about 7-10 minutes over low heat until the cheese melts evenly. Then sprinkle green onions on top of the spicy cheese chicken when turning off the heat.
