Dishes made from frog meat are all delicious, loved by many for their delicious taste and high nutritional value. So why not try changing your meal with this delicious and attractive frog stir-fry with bamboo shoots to make everyone enjoy their meal even more?
Ingredients needed for frog stir-fry with bamboo shoots:
- Bamboo shoots: 200g (You can replace with bamboo leaves depending on each person's preference)
- Turmeric powder (If unavailable, you can use fresh turmeric)
- Garlic: 1 clove
- Spring onions
- Fresh chili peppers: 2 fruits
- Coriander (cilantro): 1 bunch
- Seasonings: fish sauce, salt, oyster sauce, etc.
Preparation of ingredients for frog stir-fry with bamboo shoots:
- Separate the frog skin and meat. Then use a knife to chop the frog meat and skin into bite-sized pieces.

- Clean and slice the bamboo shoots into thick matchstick-sized pieces using chopsticks. If you're using bamboo leaves, tear them into bite-sized pieces.
- Peel and finely chop the garlic.
- Rinse and thinly slice the fresh chili peppers.
- Wash and cut the spring onions and coriander into short pieces.
Proceeding with the method of making frog stir-fried with bamboo shoots:
Step 1:

Marinate the frog meat with about a teaspoon of turmeric powder + ½ clove of finely chopped garlic + a teaspoon of salt for about 30 minutes to let the meat absorb the seasoning.
If you're using fresh turmeric, clean it, crush it, then add a little water to extract the juice. Then use a filter to collect the juice, discarding the residue.
Step 2:

Blanch the bamboo shoots briefly to reduce bitterness and acidity. Then remove the bamboo shoots and place them on a sieve to drain excess water.
Step 3:

Heat cooking oil in a hot pan, then fry the frog meat until crispy, golden on both sides, then transfer to a separate plate.
Step 4:
In another pan, add a little cooking oil and fry the remaining garlic until golden and fragrant, then add the bamboo shoots, season to taste and stir well until the bamboo shoots are cooked.
Step 5:

Once the bamboo shoots are starting to cook, add the fried frog meat to stir-fry together with the bamboo shoots and thinly sliced chili peppers until well combined with the seasoning. Taste to adjust seasoning if needed, then add a teaspoon of oyster sauce to the dish.
Step 6:

Finally, when the bamboo shoots and frog meat are cooked through, add the spring onions and coriander, stir well, then turn off the heat. Transfer the frog stir-fry with bamboo shoots to a plate and start enjoying.
For the frog skin: Heat cooking oil in a hot pan, then fry the frog skin until crispy, then arrange on a plate. This dish is best served hot with spicy chili sauce for dipping.
