Ingredients:
– 200g spaghetti pasta
– 300g skinless chicken breast fillet
– 2 eggs from free-range chickens
– 200 grams of all-purpose flour
– Bread crumbs
– Parmesan cheese powder, fresh mozzarella cheese
– Tomato sauce, broccoli, fresh basil leaves
– Seasonings: Salt, pepper, garlic, olive oil, unsalted butter...
Step 1: Prepare the chicken breast and spaghetti
– Wash the chicken breast thoroughly and place it on a cutting board. Use a knife to cut it in half horizontally. Then place the chicken breast on absorbent paper, use a meat mallet to tenderize the chicken breast evenly, allowing it to quickly absorb the seasoning.

– Crack 2 eggs into a bowl and beat them evenly. Next, prepare 200 grams of all-purpose flour, breadcrumbs mixed with chili powder, pepper, powdered Parmesan cheese into 2 separate bowls. Then, coat the chicken breast in the flour bowl, roll it to ensure the flour sticks evenly around the chicken breast, then transfer the chicken breast to the egg bowl to ensure both sides are evenly coated.

– Gently shake off excess egg from the chicken breast, then place it in the bowl of prepared breadcrumbs, evenly sprinkle breadcrumbs on the surface of the chicken breast. Place the seasoned chicken breast on absorbent paper and use a meat mallet to tenderize the chicken for about 2 minutes.

– Wash the broccoli thoroughly and drain excess water.
– While waiting for the chicken to marinate, bring a pot of water to boil, add a pinch of salt, olive oil until the water is almost boiling, then add the pasta and cook for about 10 seconds. Use tongs to twist the pasta in the pot clockwise, wait for the pasta to boil for about 10 minutes then turn off the heat.

Step 2: Prepare the chicken breast and Spaghetti
– After preparing the chicken, heat a pan with hot oil, add the marinated chicken breast to the pan, add a little unsalted butter and flip the chicken breast evenly on both sides until golden brown, then transfer to a plate.

– Add some tomato sauce, 3 slices of thinly sliced fresh mozzarella cheese evenly on the chicken breast, sprinkle with a little salt and pepper for seasoning. Place the chicken plate in the oven for 10 minutes, at a temperature of about 170°C.

– While waiting for the chicken, heat a pan with hot oil, stir-fry some broccoli quickly, add a little salt, chili powder, stir-fry the broccoli until tender then turn off the heat.

– After the spaghetti is cooked, drain the pasta in a colander to remove excess water, season with a little olive oil, a pinch of salt, pepper, 1 tablespoon of tomato sauce, a little fresh basil leaves then mix well.
Step 3: Presentation
Finally, arrange the broccoli on a plate, add some tomato sauce, place the grilled chicken breast with melted cheese on top. Use chopsticks to roll the shiny golden strands of pasta and place them next to the enticing chicken breast, add some tomato sauce to the pasta and sprinkle evenly with powdered Parmesan cheese on the plate.
