3. How to Make
- • Step 1: Mixing the Flour
Mix together rice flour, tapioca flour, and salt. Then gradually pour hot water into the flour mixture and stir well with chopsticks to prevent lumps.
- • Step 2: Kneading and Shaping the Canh Noodles
After mixing the flour with water, knead the dough until smooth, then let it rest for about 30 minutes. Note: Wrap the dough with a cloth or plastic wrap to prevent it from drying out.
After 30 minutes of resting, divide the dough into small portions and roll it thinly. Then cut the dough into strands of desired thickness and length. Finally, roll the noodles in flour to prevent sticking.
- • Step 3: Blanching the Canh Noodles
Prepare a pot of boiling water for blanching the canh noodles. Once the water is boiling, gently drop in the cut noodles and cook until they float and turn translucent. Then remove the noodles, drain, and mix with 1 tablespoon of cooking oil to prevent sticking.
- • Step 4: Preparing the Shrimp and Meat
Peel and devein the fresh shrimp, then cut into bite-sized pieces. Marinate the shrimp for about 30 minutes with 1 teaspoon of minced garlic, 1 tablespoon of sugar, 1 tablespoon of fish sauce, 1 tablespoon of salt, and ½ teaspoon of ground pepper.
Marinate the minced meat with 1 teaspoon of seasoning, 1 teaspoon of fish sauce, and ½ teaspoon of ground pepper.
- • Step 5: Cooking the Broth
Heat a pot on the stove, then sauté garlic and shallots in cooking oil. Next, add the meat and shrimp and stir-fry until cooked through. Then add coconut cream and fresh coconut water, and bring to a boil. Once the broth is boiling, add the noodles and season to taste.
Note: Keep the heat low to prevent the coconut milk from boiling excessively and producing an oily smell.
4. Finished Product
Sprinkle chopped scallions and herbs on top of the shrimp and meat coconut canh noodles, along with a drizzle of fried shallots. The chewy, soft noodles combined with the sweet, creamy broth from the coconut create an enticing flavor that will captivate anyone who tries it.
