Ingredients:
- Noodles: 500 grams
- Pork trotters: 500 grams
- Morning glory: 3-4 bunches
- Tomatoes: 3 pieces
- Shallots: 2 bulbs
- Turmeric powder: 2 teaspoons
- Scallions, cilantro
- Cooking oil, chili sauce, soup powder, seasoning powder, salt
- Fresh vegetables for garnish (according to preference)
How to Cook Bun Doc Mung with Pork Trotters:
Step 1:
- Clean the pork trotters thoroughly and blanch them briefly to reduce the odor. Then, rinse them again with salt water.
- Place the pork trotters in a pressure cooker with enough water to cover, add 1 tablespoon of salt. Cook until the trotters are tender.

Step 2:
- Peel and wash the morning glory, then slice diagonally. Submerge the slices in diluted saltwater to remove sap and whiten.

- Squeeze the morning glory with salt to clean and prevent itchiness when eaten. Rinse thoroughly and squeeze out excess water.
- Heat oil in a pan and sauté the dried shallots until fragrant. Then, add the morning glory and stir-fry briefly, adding 2 teaspoons of turmeric powder for color.
- Clean the tomatoes, remove the cores. Wash and cut the scallions and cilantro into segments. Continue sautéing the dried shallots with a little oil, then add the tomatoes and stir-fry briefly.

- Once the pork trotters are tender, remove them from the pot and set aside. Add the tomatoes to the pot and simmer over low heat for about 3-5 minutes, season to taste.
- Next, add the morning glory and simmer for about 1 minute.
