Ingredients for clam porridge
- Clams: 1kg
- Glutinous rice: 50g
- Jasmine rice: 50g
- Mung beans: 50g
- Dried shallots: 3 bulbs
- Ginger: 1 sprig
- Chives, Vietnamese coriander: a little (according to each person's preference)
- Black pepper, seasoning powder, spices, fish sauce

How to cook clam porridge
- After purchasing clams, soak them in water with a few slices of chili to release any dirt. Then scrub the shells clean.

Choose large, thick clams with meaty texture to avoid being overly chewy
- Peel and thinly slice the dried shallots. Scrape the skin off the ginger, crush it, and finely chop.
- Pick and wash the shallots and Vietnamese coriander, then finely chop them.
- Soak glutinous rice, jasmine rice, and mung beans together in water for 5 - 6 hours until soft.

Mixing jasmine rice will create a smooth porridge texture
- Put clams in a pot, add 1 bowl of water and cook until clams open their mouths. Skim off the broth to remove sediment.

- After soaking the rice and mung beans, rinse them thoroughly, then put them in a blender and grind until coarse. Put the ground rice and beans into a rice cooker, pour in the clam broth (leaving behind the dirty sediment), and add a little more water so that the water level is equal to 3 parts rice.
- Close the rice cooker lid, press the cook button, and boil the porridge. Then press the keep warm button. After about 10-15 minutes, press the cook button again, bring it to a boil, then press the keep warm button again. Repeat this process several times until the rice and beans are soft and the porridge thickens. When the porridge is cooked, season with a little seasoning powder and spices to taste.
- While cooking the porridge, remove the clam shells, extract the meat. Squeeze out and discard the black parts of the clam, then wash the clam meat thoroughly with water.

Cut the clam meat into small, crispy, chewy pieces
- Cut the clam meat into small pieces, 2, 3, or 4 depending on the size of the clam.
- Saute the dried shallots and ginger until fragrant, add the clam meat and stir-fry. Season with a bit of fish sauce and seasoning powder to taste, quickly mix well to let the clam meat absorb the flavors, then turn off the heat (only stir-fry briefly, prolonged cooking will make the clam meat tough and chewy).

Quickly stir-fry the clam meat to infuse the flavors
- Ladle the porridge into a bowl, add chopped chives and Vietnamese coriander along with some clam meat on top. When eating, mix well and sprinkle with a bit of black pepper or chili powder according to preference. If you like, you can also cut some fried breadsticks to serve alongside.
