Ingredients for making delicious Saigon-style broken rice with grilled pork and shredded pork skin:
- Pork spare ribs: 300g
- Beef shoulder: 400g
- Pork skin: 200g
- Chicken eggs: 4
- Broken rice
- Ground pork

- Vermicelli noodles
- Honey: 2 tablespoons
- Fish sauce, salt, oyster sauce, sesame oil, black pepper, sugar, vinegar

How to make broken rice with grilled pork and shredded pork skin:
Step 1: Cook the rice
- Rinse the broken rice 2-3 times until clean, then put it in an electric rice cooker and cook like regular rice until done.
Step 2: Prepare the grilled pork spare ribs
- Clean the pork spare ribs, blanch quickly in hot boiling water, then rinse and pat dry with a towel.
- Peel and finely chop the garlic and dried shallots.
- Marinate the meat with spices: 2 tablespoons honey, 1 teaspoon salt, 1 tablespoon fish sauce, 2 teaspoons oyster sauce, 1 teaspoon sesame oil, 1 teaspoon minced garlic, 1 teaspoon minced dried shallots, 1 teaspoon black pepper. Mix well, wrap tightly, and refrigerate overnight.
- Next, grill each slice of meat over charcoal until cooked and evenly golden. Alternatively, you can grill the meat in the oven at 180°C for 30 - 45 minutes, occasionally brushing the meat sauce mixture onto the surface to prevent it from drying out.

Step 3: Prepare the shredded pork skin
- Clean the pork skin, boil in boiling water briefly, do not boil for too long as the skin will become tough. Take out the skin to cool, then slice into strips (if you want it simpler, you can buy pre-sliced pork skin).
- Clean the beef shoulder, cut in half.
- Marinate the meat with minced garlic, 2 tablespoons fish sauce, 2 tablespoons sugar, 1 teaspoon salt, ½ teaspoon black pepper, marinate for 3 - 4 hours.
- Then heat some oil in a pan, add the meat and the meat sauce mixture, fry until both sides are golden brown. If the sauce dries out, add a little cold water, continue cooking until the meat is cooked.

- After the meat is evenly browned, let it cool, then shred or cut it into small strips.
- Mix the roasted peanuts, shredded pork skin, and shredded meat in a large bowl.
Step 4: Prepare the egg meatloaf
- Soak the wood ears in warm water for 20 minutes to soften, remove the stems, then finely chop. Soak the vermicelli in warm water for 10 minutes to soften, then drain and cut into short pieces.
- Mix ground pork, vermicelli, wood ears, finely chopped dried shallots in a small bowl. Then beat in 3 eggs and one egg white (reserve one egg yolk for the surface of the meatloaf), add 2 teaspoons salt, 1 teaspoon fish sauce, 1 teaspoon sugar.
- Steam the egg meatloaf in a water bath for about 30 minutes until cooked. Then pour the remaining beaten egg yolk on the surface and steam for another 10 minutes.
- Cut the cooked egg meatloaf into bite-sized pieces.

Step 5: Prepare the dipping fish sauce
- Ratio: 3 tablespoons fish sauce, 3 tablespoons sugar, 3 tablespoons water, and 1 tablespoon vinegar. Boil the mixture until dissolved, let it cool down, gradually add fish sauce, then vinegar, season to taste.
- Wash the chili peppers, make shallow cuts on the surface, boil until soft.
- Use a spoon to crush the chili into small pieces, no need to make it smooth. Heat some cooking oil, sauté garlic until fragrant, add chili peppers, 1 teaspoon sugar, 1 teaspoon vinegar, boil for about 5 minutes, then turn off the heat, let it cool, and mix the chili mixture with fish sauce.

Step 6: Completion
- Wash the cucumbers, and tomatoes, then peel them. Slice them thinly.
- When eating, put a bit of rice aside, add a slice of pork, a slice of egg meatloaf, some shredded pork skin, some shredded carrots, fish sauce, serve with cucumbers and tomatoes.
