- Lemongrass: 3 bulbs
- Roasted salt powder: 1 small bowl
- Duck meat: 1kg
- Tapioca flour: 1 small bowl

- White wine: 150ml
- Red horn chili: 3 pieces
- Chicken egg: 1
How to make delicious salted duck:

- Rub duck meat with salt, ginger, and white wine, then wash thoroughly to remove any unpleasant smell and gaminess. Then, cut into bite-sized pieces.

- Marinate duck meat pieces with 2 teaspoons of seasoning powder and chicken egg yolk for about 10 – 15 minutes (use sparingly seasoning powder to avoid making the duck meat too salty after frying with salt).
- While waiting for the duck to marinate, wash lemongrass thoroughly and slice thinly. Wash chili, remove seeds, and slice into strips.

- After duck meat has marinated, pour tapioca flour into a large bowl, roll duck meat in flour so that flour coats all sides of duck meat evenly.
- Place pan on stove, pour in cooking oil, wait for oil to heat up, then fry duck until crispy (it's advisable to deep fry duck submerged in oil to ensure even browning). When duck meat is evenly golden brown, remove onto plate lined with paper towels.
- Still using the same pan used to fry duck, add lemongrass and fry until golden, then remove and set aside in a small bowl.

- Next, place another pan on the stove, add the crispy fried duck, sprinkle salt powder over it, then add the fried lemongrass, stir-fry for about 5 minutes, then turn off the heat.

- Finally, transfer the salted duck onto a plate, then sprinkle some thinly sliced chili on top for garnish, and it's ready to serve!
