Step 1: Clean the pig ears
- After purchasing the pig ears, rub them thoroughly with salt to remove any dirt and eliminate odor.
- If the pig ears still have hair, use a sharp knife to scrape them off, then rinse with clean water.
- Soak the pig ears with 1 smashed ginger, diluted saltwater, 1 lemon, and 50ml rice vinegar. Soak for about 10 – 15 minutes, then rinse again with water.
Step 2: Prepare the ingredients
- Finely chop 2 lemongrass stalks. Cut 2 stalks into segments and thinly slice the remaining one.
- Peel and finely crush the ginger.
- Rinse and finely chop 3 chili peppers. Remove the seeds from the horn pepper and finely dice. Peel and finely chop the garlic.
- Preparing the sauce: Combine 1 tablespoon of oyster sauce, 1 teaspoon of five-spice powder, 50ml fish sauce, 1 teaspoon of chili powder, and 2 teaspoons of white sugar in a large bowl, then mix well until all the spices are dissolved.
Step 3: Boil the pig ears
- Prepare a pot of water and add about 50ml of vinegar, 3 shallots, 2 lemongrass stalks, and crushed ginger. Boil the pig ears in this mixture for about 15 minutes. After the water boils for 5 minutes, flip the pig ears to ensure even cooking.
- Once boiled, remove the pig ears and place them in a bowl of cold water with ice cubes. Soak them in cold water until completely cool, then drain. This method helps the pig ears retain their crispiness.
- After cooling, thinly slice the pig ears.
