- Salt: ½ teaspoon
- 1 teaspoon of coffee (can add sugar if prefer sweet)
- Eggs: 3
- Broth: 260ml (can use chicken broth)
- Pork belly or smoked pork: 200 grams
- Shrimp: 200 grams (can add or substitute with octopus as desired)
- Baby cabbage: 350 grams
- Scallions: 1 large bunch
- Red ginger: 50 grams
- Olive oil
- Mayonnaise
Decoration (optional) :
- Shredded seaweed
- Okonomiyaki sauce
- Grated fish
How to make Japanese-style pancakes:
Step 1:
- Put flour and salt in a large bowl, gradually pour broth into the bowl. While pouring, whisk to dissolve the flour mixture. Let the batter rest for about 10 minutes. If you're using Japanese pancake mix, you don't need to add extra seasoning.
- While waiting for the batter to rest, prepare the other ingredients. Clean the meat, slice it into long strips about 5 cm long.
- Briefly parboil the shrimp, remove the black vein on the back, then finely chop.
- Trim the scallions and baby cabbage, discard any wilted leaves, wash thoroughly, and chop finely. Peel and clean the red ginger, then finely mince.

Step 2:
- Mix the prepared vegetables and shrimp with the flour mixture, crack the eggs into the bowl, and mix well. Be careful not to overmix as the batter will become lumpy.
- Place a non-stick skillet on the stove, lightly brush the surface with olive oil, then heat over high heat. Once the pan is hot, pour in the batter mixture. Remember to reserve some batter in the bowl.
- Reduce the heat to low and allow the pancake to cook slowly. Arrange the pork belly slices on top of the pancake. Spread the reserved batter over the pancake to keep the meat moist and prevent it from burning or sticking.

Step 3:
- Cover the pan again and cook for about 2 minutes. Use a small spatula to check if the bottom of the pancake is cooked. If the bottom is dry and turns golden brown, flip it over, and cook the other side.

- Once both sides of the pancake have turned golden brown, cover the pan, reduce the heat to the lowest setting, and cook for an additional 5 minutes to ensure the filling inside the pancake is cooked through.
- Arrange the pancake on a plate, drizzle mayonnaise and Okonomiyaki sauce on top to make it visually appealing. If desired, sprinkle shredded seaweed and shredded fish on top to enhance the flavor.
So there you have it, the Japanese-style savory pancake is now complete. It's not too difficult, is it? When enjoying it, you can cut it into bite-sized pieces or triangular slices like pizza. This pancake is rich in vegetables and lean meat, making it easy to digest and suitable for breakfast or a light meal.
