My favorite when having rice plate is this egg patty. This elderly lady has been selling it near my house since I was a little kid, back when a plate of rice costed 3,000 to 5,000. Now it's gradually increased to 20,000 to 25,000. However, the flavor remains timeless. Eating it continuously is still a delightful experience.
Ingredients
Ground pork: 400g
Chicken eggs: 6 eggs
Shiitake mushrooms: 5 mushroom caps
Bean thread noodles: about 4 bundles
Carrots: 1/2 piece
Salt: 1/2 teaspoon
White sugar: 1 teaspoon
Cooking oil: 2 tablespoons
Seasoning powder: 1/2 teaspoon
Purple onions: 1 bulb
Pepper: 1/2 teaspoon
Instructions:
Step 1: Buy pork, wash it thoroughly, and mince it yourself for peace of mind. Choose pork shoulder for the best taste. After washing, let it drain a bit, cut into small pieces, and finely mince. Mincing provides a better texture than grinding, adding delightful chewiness when eaten.
Step 2: Peel and clean purple onions, wash them, finely mince, and add to the minced pork for fragrance.

Step 3: Soak shiitake mushrooms in hot water for about 10 minutes until they become soft. Cut off the stems, clean thoroughly in the gills, cut into strips, and finely chop.
Step 4: Peel and clean carrots, wash them, and finely mince. Soak bean thread noodles in water to soften, then cut into 5cm lengths.

Step 5: Add mushrooms, carrots, and bean thread noodles to the meat mixture. Then, season with all the specified amounts of spices.

Step 6: Crack 3 eggs, separate the yolks. Add the remaining eggs to the mixture. Mix thoroughly to ensure even absorption.

Step 7: Grease the mold lightly for easy removal, pour the meatball mixture, spread evenly. Steam for about 20 minutes, check with a skewer, and if it comes out clean, the meatball is cooked.
Step 8: Beat the separated 3 egg yolks, pour them over the meatball, shake gently to evenly cover the surface. Steam for an additional 10 minutes for the egg to cook. Optionally, slice some chili peppers and sprinkle them on the surface when pouring the egg for a more appealing presentation!
