Accompanying sauces are an essential characteristic of European dishes. If you can't dine out, when cooking European cuisine at home, you'll definitely need these 3 types of sauces!
European dishes are often prepared with great delicacy and precision. Therefore, when cooking European dishes at home, you must pay attention to not overlook the accompanying sauces; otherwise, the flavor may be diminished.

Sauces are an integral part of European cuisine
Today, the chef at Jacksons Steakhouse – one of the top European restaurants in Hanoi – will show you how to make extremely simple versions of 3 sauces that are essential for popular European dishes. This is for those times when you can't dine out at upscale restaurants but still want to enjoy authentic European cuisine!
1. Tomato Sauce
Tomato sauce is considered the most popular worldwide, with simple and easy-to-find ingredients. Choose plum tomatoes or beefsteak tomatoes for better flavor. Here, we'll use 500g of tomatoes as the standard for the other ingredients.
First, make two shallow cuts forming a long cross at the base of each tomato and blanch them in boiling water for about 2 minutes. Then, remove and peel the tomatoes using a sharp knife, cut them in half, remove the seeds, and chop them into small pieces.

Peel the tomatoes
Take 2 cloves of garlic, peel them, sprinkle some pepper and sugar, then wrap them in foil and bake for about 35 minutes at 40 - 50 degrees Celsius. Then, let them cool.
Heat about 2 tablespoons of oil in a pan until hot, then add 1 carrot + 3 onions, all finely chopped, and the roasted garlic, and sauté until cooked. Add the tomatoes and simmer until thickened. Season with salt (or fish sauce according to your taste) and a little sugar, stir until well combined, then turn off the heat.

Simmer until thickened
You can pair tomato sauce with Italian pasta, chicken, salmon, or bread. At Jacksons Steakhouse, bread is often served with fragrant Caesar sauce while tomato sauce is extremely popular with Pasta Primavera - a dish of small, flat Italian noodles mixed with fragrant grilled vegetables and tossed in a rich tomato sauce.

Pasta, mashed potatoes, and fries at Jacksons Steakhouse are all served with potato sauce.
2. Fresh Cream Sauce
The signature dishes at Jacksons Steakhouse include steak and grilled beef, which is why fresh cream sauce is extremely popular. Moreover, in Jacksons Steakhouse's menu, fresh cream sauce is also an essential component of smoked salmon sandwich, cauliflower soup, pan-seared trout with mashed potatoes, etc.

Pasta, pan-seared salmon with fresh cream sauce are both hot items at Jackson Steakhouse
Ingredients needed: 50ml whipping cream, 100ml beef broth, 10g flour, 10g butter, 5g each of salt and pepper
Method: Melt butter in a hot pan, add flour and stir well. Pour in beef broth, season with salt and pepper. Stir until the sauce thickens slightly, then add whipping cream and let it simmer until all ingredients are well mixed. Turn off the heat.

Simple method, only takes about 5 minutes
3. Lemon Butter Sauce
Lemon butter sauce can be used for salmon, pan-seared trout with capers, or braised leeks - all delicious and nutritious dishes on Jacksons Steakhouse's main menu.
The ingredients and method for this sauce are very simple. You'll need 70ml white wine, 50g butter, and 15ml lemon juice.
Heat the wine in a saucepan, simmer for about 2 minutes, then add the butter and stir well. Once the butter has melted, add the lemon juice and stir thoroughly one more time to finish.

Lemon butter sauce can be paired with bread, fish, or chicken,... and it's all delicious.
These 3 types of sauces are simple to make, taking just a few minutes, but can be used for many popular European dishes, so don't overlook them when cooking European cuisine at home!
