Step 2:

- Clean the tomatoes, cut them into wedges.

- Peel the tamarind, wash it, and slice it around the core.
- Clean and finely chop scallions, setting aside the scallion heads.
Step 3:

- Place a pot on the stove, add 1 tablespoon of cooking oil, sauté the scallion heads until fragrant, then add the ribs and stir-fry until browned.

- Once the ribs are browned, add enough water to cover them, then add tamarind. Bring to a boil and simmer over low heat. Remember to skim off any foam from the water. After 25 minutes, when the ribs are nearly cooked, skim off any foam, then remove and set aside the tamarind.
Step 4:

- Place another pan on the stove, add 1 tablespoon of cooking oil, then sauté the tomatoes until soft.

- Transfer the tomatoes and tamarind back to the ribs pot, simmer for an additional 10 minutes, season with the remaining spices, and adjust the taste to your liking.
- Finally, turn off the heat, garnish with scallions and black pepper, then ladle the soup into a bowl.
