Ingredients:
(serving for 4 people)
- 1 carp fish (700g to 1kg)
- 200g pork belly
- 1 large bowl of Chinese cabbage
- 3 tomatoes
- 2 bulbs of dried shallots
- 3 cloves of garlic
- 2 chili peppers
- Coriander, scallions
- Salt, pepper, sugar, seasoning powder, and cooking oil.
How to make braised carp with pickled vegetables:
Step 1: Preparing
- Scale and gut the carp, wash with a pinch of salt to remove slime, then score the skin to help it cook evenly.
- Marinate the fish with 1 teaspoon of pepper, 2 teaspoons of soup powder, let it sit for 15 minutes to absorb the seasoning.

- Clean the pork belly and cut into small pieces.
- Squeeze excess water from the pickled vegetables, reserve the pickling liquid.
Note: If the pickled vegetables are too sour, you can rinse them a few times with water.
- Peel and finely chop the garlic and dried shallots.
- Clean and cut the spring onions and dill.
- Wash the chili peppers, trim the top off one, and slice the other.
- Clean the tomatoes, core them.

Step 2: Execution
- First, place the fish in a pan to sear. Searing the fish will reduce its fishy smell, and the flesh will become firmer and more fragrant.
- Then, add cooking oil to the pan and sauté the garlic and shallots until fragrant. When the garlic and shallots release their aroma, add the tomatoes and crush them. You can add a little water at this point to prevent the tomatoes from burning.
- Once the tomatoes have turned into sauce, add the pork belly and stir-fry. Stir-fry for about 2-3 minutes, then add the pickled vegetables. Add some water, season with fish sauce, soup powder, a little vinegar, and the reserved pickling liquid. Braise until the pickled vegetables and pork are tender.
- After braising for about 10 to 15 minutes, add the seared carp to the pot. Cover and continue to simmer over low heat for another 15 minutes. Before turning off the heat, adjust the seasoning to taste, then add the spring onions and dill to the pot.

Note: If you prefer the fish to be softer, you can simmer it over low heat for a longer time.
