- Fish cake: 100 grams
- Red rice noodle: 300 grams
- Tomatoes: 3 pieces
- Betel leaves: 1 bunch; Star anise: 3 pieces
- Spring onion: 2 large stalks; shallots: 4, 5 bulbs; coriander: 1 bunch; dried tamarind: a small amount
- Water spinach, cilantro: 1 bunch each
- Fresh vegetables: lettuce, bean sprouts, basil... according to preference
- Seasonings: sugar, salt, fish sauce, MSG, cooking oil...
How to make crab noodle:
Step 1: Prepare the broth
- Clean and chop pork bones, blanch them in boiling water to remove unpleasant odor, then transfer to a pot. Add enough water and simmer for approximately 1-2 hours, then remove the bones. Avoid adding too much water to ensure the broth includes the essence from the crab boiling process.
- Clean the crab thoroughly, remove the shell and gills. Use a crab pick to extract the crab roe, place it in a small bowl, and grind or use a grinder.
- Pour water slowly into the mortar, squeeze gently, then use a fine sieve to filter out all the residue, retaining the liquid. Clean the tomatoes, cut into wedges, and stir-fry until tender.
- Bring water to a gentle boil with low heat, stir gently to bring the crab meat to the surface, scoop the crab meat into a separate bowl. Pour the crab bone broth and tomatoes into the pot, wait for it to boil, then add the crab roe and meat. Once it boils again, season to taste and turn off the heat.

Step 2: Make pandan-wrapped pork
- Soak mộc nhĩ in warm water for about 15 minutes to soften, then remove the stems and finely chop. Peel and finely chop the shallots.
- Mix minced meat thoroughly with 1/3 of purple onions, mộc nhĩ, and ½ teaspoon of salt.
- Spread the cleaned betel leaves on a clean flat surface, scoop a portion of the ground meat onto the betel leaf, roll tightly by hand, then fry successively in hot oil.

Step 3: Prepare the remaining ingredients and presentation
- Clean and cut water spinach and cilantro into sections, drain. If you don't like raw vegetables, you can quickly blanch them in boiling water.
- Clean various types of raw vegetables, soak them in diluted saltwater for about 20 minutes, then rinse with filtered water (except for bean sprouts, which only need a quick rinse).
- Soak dried tamarind in warm water, pound to extract the essence. Sauté the shallots until fragrant, set aside. Clean and finely chop the scallions. Cut the fish cake into bite-sized pieces.
- Rinse the red rice noodles, soak in cold water for about 5 minutes, then briefly blanch in hot water to soften.

- Arrange the red rice noodles in a large bowl, layer various types of vegetables, scallions, bean sprouts, pandan-wrapped pork, fish cake, sautéed shallots, and more on top. Ladle in the crab broth, add the crab roe, and drizzle with tamarind water and chili. Serve hot.
