– Basa fish: 500 gr
– Dried shallots: 2 bulbs
– Spring onions: 2 stalks
– Black pepper: 1/2 teaspoon
– Sugar: 3 tablespoons
– Fresh chili
Instructions:
Step 1: Clean the basa fish, cut into bite-sized pieces. Marinate with dried shallots, black pepper, 3 tablespoons of fish sauce, and fresh chili.
Step 2: Add 3 tablespoons of sugar to a pot, cook until the sugar turns golden brown, then add 1/2 bowl of water.
Step 3: Place the fish in the pot with the reserved water. Boil the fish over high heat, then reduce to low heat. When the fish is tender and the liquid is nearly evaporated, add 1 tablespoon of sugar. Season to taste and turn off the heat.
