Buns are an immensely popular type of pastry, especially among youngsters. While traditionally prepared with savory meat fillings or sweet options like mung beans, today PasGo will guide you on creating custard bun eggs in a unique way.

Ingredients for 4-5 servings:
Filling:
- Chicken eggs: 4 eggs
- Fresh milk: 90ml
- Wheat flour: 50g
- Butter: 50g
- Sugar: 160g
Outer layer:
- Wheat flour: 300g
- Warm water: 180ml
- Yeast: 5g
- Sugar: 5g
- Salt: 5g
How to make custard bun eggs:
Step 1: Prepare the ingredients

Crack the eggs into a separate bowl. Mince the butter into small pieces and melt it in a pan.

Ensure the wheat flour for the filling is finely ground by giving it a smooth grind.
Activate the yeast by dissolving it in pre-prepared warm water.
Step 2: Execution Steps

Add salt and sugar to the dissolved yeast water from the preparation step. Gradually incorporate one-third of the wheat flour, stirring thoroughly by hand.

Once the flour has fully dissolved, vigorously incorporate the remaining flour until it forms a cohesive, non-sticky dough. When the mixture becomes uniformly blended and no longer sticks to your hands, cover the bowl with plastic wrap. Allow the dough to rest until it doubles in size.
During the dough fermentation period, we'll proceed with preparing the filling.

Add milk and sugar to the pre-whisked egg bowl, beat the eggs vigorously until the mixture becomes fluffy. Then, add the melted butter to the egg mixture and finally incorporate the sifted wheat flour. Stir vigorously once more to ensure a well-blended mixture.


Next, prepare a pot and add a small amount of water inside. Then, place the egg and milk mixture bowl inside the pot, and we'll proceed with steaming the filling (make sure to use high heat).

While steaming the egg mixture, remember to open the pot every 5 minutes and stir the egg bowl thoroughly. The steaming time for the cake filling is 20 minutes. Afterward, let the filling cool completely, then shape it into small, bite-sized rounds.
Once the dough has risen sufficiently, knead it once more and divide it into equal portions. The dough portion should be twice the size of the filling.

Next, take a portion of the dough, shape it into a round ball, press it flat, place a filling ball inside, and carefully mold the cake to create a beautifully rounded shape, fully enclosing the filling. Repeat this process until all the filling and dough are used.

Prepare a steaming pot, place a piece of parchment paper at the bottom, then arrange the cakes inside. Allow the cakes to rest in the pot for about 15 minutes before turning on the heat to steam the cakes.

Steam the cakes for about 10 minutes, then turn off the heat. Don't rush to remove the cakes; let them sit in the pot for a few more minutes.
Finally, transfer the cakes to a plate and indulge!
