1. Ingredients
- Broken rice: 500g ( soaked for 2 hours)
- Peanuts: 100g ( soaked overnight)
- Tapioca flour: 20g
- Lime paste
- Salt
- Pork fat: 500g ( use 100ml of fat to make the candy)
- Dipping sauce for candy: Fermented soybean paste, ginger, sugar
2. Necessary tools
Induction stove/ infrared stove, non-stick pan, clean bamboo tray lined with banana leaves/dong leaves or clean ceramic plate
3. Traditional peanut candy making process
- Step 1: Soak broken rice for about 2 hours, then drain. Keep the soaking water. Next, put the rice in a blender with about 200ml of rice soaking water. Pour the wet rice flour into a pot. (Note: Use a thick-bottomed pot for good heat transfer. Wide mouth pot for easy stirring)
- Step 2: Clean pork fat, cut into small pieces, then put the diced fat into a deep non-stick pan to melt the fat, when stirring the cake will not stick to the bottom. Heat the pan over medium heat to melt the fat slowly and add a few slices of ginger to the pan to remove the smell.
- Step 3: Add 1 tablespoon of lime paste to a bowl with 500ml of filtered water, stir well to dissolve the lime. Then let it settle until you see lime sediment, then take the lime water and mix it with rice flour, stir until the flour changes color, the lime turns slightly yellow, then add salt and stir well. Pour a spoonful of flour water into the starch bowl, stir to dissolve evenly and then pour it back into the cake pot.
- Step 4: Soak peanuts overnight, then scoop out the clean peanuts and let them drain. Then put the peanuts in the cake pot.
- Step 5: Place the pot on the stove to medium heat, stir the dough evenly with chopsticks until the cake thickens gradually. Only then add pork fat little by little, stirring until the cake becomes shiny and smooth. The dough will thicken until the dough is cooked and flows out, then the cake is cooked.
- Step 6: Prepare a clean bamboo tray/flat smooth plate. You can grease the leaves with a layer of oil/fat or the plate to make the cake easy to remove and fragrant when pouring the hot cake out. Then, pour the cake onto the plate to form a flat round cake. Shake the tray/plate evenly to make the cake smooth flat. Let the cake cool, cut into small bite-sized pieces
4. Finished product
After completion, the rice cake is milky white in color, with a rich, smooth, and elastic texture, paired with the characteristic savory flavor of soybean sauce, creating an unforgettable taste sensation.
