Ingredients:

- Chicken feet: 10 pieces
- Garlic: 1 bulb
- Ginger: 1 sprig
- Chili peppers: 2 pieces
- Vietnamese coriander: 1 bunch
- Onion: 1 bulb
- Carrot: 1 bulb
- Cucumbers: 2 pieces
- Lime: 1 piece
- Seasonings: fish sauce, salt, seasoning powder, MSG, pepper
Note: You can choose to buy industrially processed chicken feet, which will be larger and have more meat, resulting in a much tastier dish.
How to Make Chicken Feet Salad
Step 1: Debone the Chicken Feet

- Clean the chicken feet thoroughly, remove the claws, cut the bones and put them in a pot of water with a few slices of ginger, simmer over medium heat.
- Boil the chicken feet for 20 minutes over low heat or until they are just tender.
- Next, soak the chicken feet in a bowl of ice water for 10 minutes to make them crispy, then drain (this is an important step to ensure the chicken feet are crunchy and easy to debone in the following steps).
- After soaking, transfer the chicken feet to a plate, cover with plastic wrap, and refrigerate for about 2 hours.
- Use a knife to cut between each toe of the chicken feet, then use your index finger and thumb to push the skin at the base of each claw down to expose the first bone, remove it, and continue in the same manner until all toe bones are removed, leaving the skin and tendons intact. Repeat the same process with the ankle part of the feet.

Step 2: Mix the Salad
- Grate the carrots, soak them with a bit of sugar, vinegar, and a pinch of salt.
- Finely mince the garlic, chili peppers, and ginger.
- Season the chicken feet with 1 teaspoon of soup powder, half of the minced garlic, chili pepper, and ginger mixture (reserve the other half), 2 teaspoons of sugar, juice from half a lime. Adjust seasoning to taste. Let the marinated mixture sit for about 20 minutes to allow the chicken feet to absorb the flavors evenly. You can sprinkle some sesame seeds for a nutty flavor.
- Wash the cucumbers thoroughly, soak them in salted water for 15 minutes, remove the seeds, and thinly slice (you can leave the skin on or peel it according to preference).
- Thinly slice the onions, soak in water.

- Now, mix jicama, carrots, onions, cucumbers with 1 teaspoon of soup powder, 2 teaspoons of sugar, juice from half a lime, ½ portion of chili seasoning, the chicken feet mixture with the remaining half of minced garlic and ginger, thoroughly combine all ingredients and seasonings. Chill in the refrigerator to enhance crispiness before serving for about 10-15 minutes.

- Prepare the seasoning sauce for the chicken feet salad: Crush garlic and chili, mix with two tablespoons of fish sauce, two tablespoons of sugar, and 1.5 tablespoons of vinegar. Stir well until sugar dissolves, then add finely chopped garlic and chili to the dipping sauce bowl.
- Finally, evenly pour the seasoned sauce mixture over the prepared salad, toss gently, transfer to a serving plate, and enjoy. You can serve the chicken feet salad with a variety of fresh herbs according to your preference for an extra enticing dish.
