- 2 eggs

- Mayonnaise sauce, okonomiyaki sauce, salt, cooking oil
- 30g red ginger
- Crumbled seaweed
- Dried bonito flakes

How to make Japanese-style banh xeo:
Step 1:
- Mix all-purpose flour, salt, and chicken broth in a large bowl until thoroughly combined.
- Finely chop spring onions, cabbage, and ginger.
- Slice pork into 5cm-long strips.
- Dice octopus (or precooked shrimp).
- Add all the above ingredients to the flour bowl, add 2 chicken eggs, and mix well.

Step 2:

- Heat cooking oil in a pan until hot. Pour the mixture into the pan, leaving some in a bowl for later use. Add pork belly on top and pour the remaining batter in the bowl over the meat. Cover and cook for 2 minutes until the outer layer is evenly browned.
- When the bottom side turns golden, flip and continue cooking. Cover and cook until both sides are golden brown and slightly crispy. Flip the pancake again, reduce the heat to medium, and cook until the inside is fully cooked.
- Once cooked, spread okonomiyaki sauce, mayonnaise sauce, and spring onions on top of the pancake. Add seaweed and bonito flakes for an appealing look. Cut the pancake into bite-sized pieces and enjoy.
