Aquarium crab spring rolls are perfect for family gatherings and weekends with friends or holidays. A specialty of Hai Phong residents, aquarium crab spring rolls boast the sweet and sour flavor of the dipping sauce, the fresh colors, and the rich taste of crab meat, combined with the crispy texture of the rice paper, all blending together to create a unique dish.

Ingredients:
- Ground lean pork: 250g
- Seawater crab: 1 (choose meaty crab)
- Chicken eggs: 3
- Jicama, carrots
- 1 packet of spring roll wrappers
- Price: 50g
- Vermicelli noodles: 10g
- Shiitake mushrooms, wood ear mushrooms
- Garlic, purple onions, green papaya
- Fish sauce, seasoning powder, black pepper, salt, vinegar, lime
When selecting crabs, it's important to note that good crabs often have a cloudy gray shell or sometimes a yellowish tinge due to clinging barnacles. You can use your hand to press on the crab's apron or squeeze the soft part inside the crab's belly; if it feels firm, then it's a firm crab, rich in meat. If the crab looks beautiful, shiny, with bright green legs and a fresh green apron, and pressing on the apron feels soft, then it's a juicy crab, with very little meat.
How to make crab spring rolls:
Step 1:
- Clean and boil the sea crab, then remove the meat.

- Peel and clean the jicama, carrots, then finely julienne them.
- Soak the glass noodles, shiitake mushrooms, wood ear mushrooms in warm water until soft and bloomed. Note to soak each type separately.
- Cut glass noodles into short segments. Finely chop shiitake mushrooms and wood ear mushrooms.
- Wash bean sprouts and finely slice them.
Step 2:
- In a large mixing bowl, combine minced pork, crab meat, carrots, jicama, mushrooms, bean sprouts, and crack eggs, then mix thoroughly.
- Add 1 tablespoon of salt, ½ tablespoon of seasoning powder, 1 teaspoon of black pepper and mix well to let the ingredients absorb the seasoning.

Step 3:
- Pour vinegar or squeeze lime into a small bowl. Then dip the rice paper wrapper in it for a crispier texture when frying. Alternatively, you can use tomato to spread on the surface of the rice paper wrapper.
- Spread the rice paper wrapper on a clean, flat surface, then place the filling in the middle, spreading it evenly. Then fold the wrapper's four corners, wrapping the spring roll into a square shape. Repeat until all the rice paper wrappers and filling are used up.

Step 4:
- Heat vegetable oil in a pan until hot, then add the spring rolls to fry, flipping them to ensure even cooking until they are golden brown. Make sure the spring rolls are fully submerged in oil to ensure even browning and crispiness.
- Once the spring rolls are cooked, transfer them to a plate lined with paper towels to absorb excess oil, then use scissors or a knife to cut the spring rolls into halves or quarters.
Step 5:
- Green papaya, peeled and cleaned carrots, thinly sliced into small squares.
- Place green papaya and carrots in a bowl, season with 1 teaspoon of coffee and 1 teaspoon of sugar, mix well to marinate.
- Prepare the sweet and sour dipping sauce: 3 tablespoons of fish sauce, 5 tablespoons of water, juice of 1 lime, 1 tablespoon of sugar. Stir well until dissolved.
- Then add carrots and green papaya, scoop into a small bowl for dipping.
- Arrange the spring rolls on a plate and serve with sweet and sour dipping sauce.

Final Product Requirements:
- The fried spring rolls should be golden and crispy, with a flavorful and sweet filling, and the outer shell should be crispy without being tough.
- The dipping sauce should have a balanced sweet and sour flavor, with just enough saltiness to complement the spring rolls.
