- 1 bowl of brown rice
- 1 bowl of glutinous rice
- 3 tablespoons of peeled green beans
- 1 tablespoon of coarse salt
- 1 teaspoon of black peppercorns
- 1 kg of mantis shrimp
- 4-5 kaffir lime leaves
- 4 stalks of lemongrass
- 2 red horn peppers
How to prepare salted mantis shrimp:
Step 1: Making the 'salt' for salted mantis shrimp:

- Soak sticky rice, jasmine rice, and peeled mung beans separately in 3 bowls of water for about 30 minutes. After soaking, drain them in 3 separate baskets to remove excess water, then roast each type until fully cooked.
- After roasting all three types, proceed to roast the rock salt in the pan until it changes color from white to cloudy white, indicating it's dry.

- Use a mortar to grind each of the three types of rice separately, avoiding too fine a grind to maintain a visually appealing texture. For the salt, grind it into small particles.

- After finishing, mix all 4 types in a bowl to cool completely, then transfer it to a clean, dry jar. Add a teaspoon of finely ground pepper and mix well.
Step 2: Prepare the mantis shrimp

- Clean the mantis shrimp, drain excess water, and cut the shell along the back for better salt absorption and easier peeling when eating.
Step 3: Fry the mantis shrimp
- Clean and drain lemongrass and kaffir lime leaves, then julienne them thinly; leave the kaffir lime leaves whole.
- Place a deep pan on the stove, pour in oil, and heat until it's hot. Fry until golden brown, shake the lemongrass for crispiness, and dip the chili in the oil or leave it fresh. Then, scoop them out separately.

- Quickly place the mantis shrimp into the boiling oil, fry for about 2-3 minutes, then scoop them into a small mesh sieve to drain excess oil and turn off the stove.

- Finally, pour the freshly made salt, kaffir lime leaves, and chili over the shrimp, toss evenly, and then plate it. You're done!
