Wontons originate from Guangdong, China, and were introduced to Vietnam in the early 20th century. They are easy to make and can be transformed into many delicious dishes. You can fry them and serve with chili sauce and mayonnaise or cook them into a soup for breakfast.

Ingredients:
- 40 pieces of pre-made wonton wrappers (store-bought)
- Ground pork: 350 grams
- Fresh shrimp: 300 grams
- Water chestnuts: 70 grams
- Onions: 50 grams
- Shiitake mushrooms: 100 grams
- Dried shallots, garlic
- Beef bones: 1 kilogram
- 1 white radish, 1 carrot
- 1 bunch of small chives
- Chrysanthemum greens (or kale, cabbage depending on preference)
- Seasonings: Fish sauce, seasoning powder, soy sauce, sugar, pepper, MSG, cooking oil
- Side dishes: Eggs, char siu pork

Recipe for fresh shrimp wontons:
Step 1:
- Clean beef bones thoroughly and add to a pot with 2 liters of water to make broth. Bring to a boil, add carrots and radish, simmer until the broth is sweet. Season to taste.

- Wash the shrimp thoroughly, remove the head and legs, peel off the shell, finely chop. Set aside some whole shrimp to boil and serve as a side.
- Wash and peel water chestnuts and onions, then dice them finely.
- Soak shiitake mushrooms in water until they expand, rinse well, and finely chop.
- Peel and finely chop garlic and onions.
- Peel and finely dice white radish and carrot into tiny cubes.
- Wash chives thoroughly, cut into 2 cm pieces.

- Pick out wilted leaves of chrysanthemum greens, rinse with cold water and drain.
- Hard-boiled eggs, cut in half lengthwise
Step 2:
- Put ground pork, shrimp + water chestnuts + diced onions, shiitake mushrooms, minced garlic and onions into a large bowl, season with spices and mix well.
- Blanch chrysanthemum greens briefly until tender.
- Spoon the filling into the center of a piece of wonton wrapper and seal tightly. (Avoid overfilling to prevent the wonton from bursting when cooking)
- Bring a pot of water to boil with 1 teaspoon of salt. Cook the wontons until they float, then remove and briefly soak in cold water before draining. Mix with 2 tablespoons of cooking oil to prevent sticking.

- Place wontons in a bowl. Add hard-boiled eggs, char siu pork, boiled shrimp, chrysanthemum greens, and chives on top. Pour in enough broth to cover the wontons and enjoy.
