Prepare the ingredients
- 1kg ripe tomatoes
- 1 tablespoon soy sauce
- 1 onion
- 200g brown sugar
- 10g sea salt
- 20ml olive oil
- 100ml pineapple vinegar or rice vinegar or apple cider vinegar

Processing steps
- Wash the tomatoes, remove the cores, then make a cross-shaped incision at the bottom of each tomato.
- Prepare a bowl of hot water (about 70 - 80°C) and soak the scored tomatoes for about 5 - 7 minutes. Then remove the tomatoes, peel off the skins.
- Cut the tomatoes in half horizontally, and use a spoon to scoop out all the seeds.
- Remove the tough part near the stem, and only use the soft part of the tomatoes.
- Cut the onion into small pieces.
- Put the onions and tomatoes in a blender, blend until smooth.
- Transfer the mixture to a pot along with brown sugar, soy sauce, sea salt, and vinegar.
- Cook the mixture over low heat for 30 minutes until thickened, then add a tablespoon of olive oil and stir well before turning off the heat.
