Recently, I attended a wedding at the Small Park in Tây Hồ district. Surprisingly, amidst the bustling capital, I discovered a serene, spacious, lush green oasis. Despite its modest name, Small Park is a small-scale prairie that appears quite reasonable!

An outdoor-style feast, blessed with beautiful sunny weather, under the gently slanting thatched roof of a hidden wooden hut amidst a lush garden with a hundred blooming flowers, accompanied by melodious bird songs. Enjoying wild game meat is truly fitting for the picturesque surroundings.

Glistening like a movie set!
At Small Park, the wedding banquet showcased unique dishes, such as grilled sole fish rolled with wild vegetables, firm and sweet meat. This was my first encounter with this particular fish, but there were also some well-known dishes, just not commonly accessible. For instance: slow-cooked wild boar with apricot, mountain goat stir-fried with lemongrass and chili, and soup with arrowroot and ginseng.

The dishes were intricately presented.
At the wedding feast, besides ensuring I captured every picturesque moment in the dreamlike setting of Small Park, I also attentively observed the diverse dishes, aiming to gain some experience to find a husband quickly.
Small Park was quite meticulous; when preparing the deboned pork leg dish, they carefully removed the bones to allow guests to enjoy without worrying about their attire. Impressed by the smoked deboned pork leg dish, I decided to learn the art of deboning, planning to prepare some for the upcoming festive season to share with family and guests. Surprisingly, it was much easier than I had imagined!

I also took the opportunity to pick up a few cooking tricks for future use...

+ Sharp-pointed knife and a clean cutting board
+ Pork leg (Small Park suggests that if you choose the leg first, there will be less fat. After deboning, the meat will be easy to compress, wrapping it up slender, elegant, visually appealing, and much more delicious)
3 Steps to Debone Pork Leg Quickly, Neatly, and Beautifully
Firstly, after thoroughly washing the pork leg, use small tweezers to remove all the hairs on the surface, then pat it dry with a clean cloth.

You can filter by cutting vertically or filter in a circular motion to maintain the shape of the drumstick.
Place the drumstick on the cutting board, take a sharp knife gently shave the meat around the bone in a circular motion, as you shave, use your hand to push the meat down, exposing the bone gradually.
When your knife blade touches the cartilage, confidently cut a line to completely separate the cartilage from the bone, then, gently pull the bone section out, flip the drumstick back to its original shape, so simple, surprisingly simple, isn't it?
