1. Ingredients
- Whole native chicken: 1 (approximately 1.3 - 1.5 kg)
- Peppercorns: 3 grams
- Whole black pepper: 2 grams
- Cloves: 6 buds
- Star anise: 1 piece
- Lime leaves
- Pink salt: 2 grams
- Turmeric powder: 3 grams
- Seasoning powder: 3 teaspoons
- Sugar: 3 teaspoons
- Onions: 2 bulbs
- Shallots: 5 bulbs
- Lemongrass: 3 stalks

3. Step-by-Step Guide to Infusing Flavor into Chicken with Salt in an Air Fryer
- Step 1: Clean the chicken thoroughly. Then evenly rub salt on the chicken to eliminate any odor. You can also use white wine and fresh ginger (if available) to enhance the aroma. After that, rinse the chicken with water and let it drain.

- Step 2: Pre-roast star anise and lime leaves. Then, roast peppercorns and black pepper until fragrant, turn off the heat quickly. Let it cool and grind the peppercorns, black pepper, and cloves finely.

- Step 3: Mix the spices and marinate the chicken evenly. Remember to use your hands to rub both inside and outside of the chicken to absorb the flavors. Let it marinate for about 30-40 minutes.

- Step 4: Boil water and cook the chicken with 5 bulbs of onions and 3 stalks of lemongrass. Note to keep the heat at a medium level, boil the chicken for about 15 minutes, then turn off the heat to cool. After boiling for about 5 minutes, open the lid and flip the chicken once to evenly cook the meat.

- Step 5: Line the air fryer tray with aluminum foil. Then evenly spread salt on the tray and place the crushed lemongrass and onions on top. Place the chicken on the top.

- Step 6: Oven-dry the chicken at a temperature of 180 degrees for about 1 hour or 1 hour 30 minutes until it's done.
4. Finished Product
