Step 1: Preparing the Shrimp
- Clean the Tiger Prawns thoroughly. Use scissors to separate the head and body of the prawns. Clean and rinse the prawn heads with diluted saltwater.

- Peel the shell off the body, leaving a small notch at the tail. Remove the back vein. Clean the prawn meat with a pinch of salt and lime juice. After cleaning, immerse the prawns in icy water to enhance crispiness.
- Next, season the prawn heads with 1 tablespoon of cornstarch or tempura flour.

- Heat the pan until hot and golden brown.
Step 2: Dip the Prawns in Lime Juice and Seasonings
Prepare a bowl with a mixture of 3 tablespoons of lime juice and ½ tablespoon of sesame seeds. Then immerse the shrimp in this mixture and arrange them on a plate.

Step 3: Prepare the Sauce
- Peel and clean lemongrass, cut into segments. Peel shallots, garlic, and chop finely. Clean chili and remove seeds and stems. Squeeze juice from 2 limes.
- Put lemongrass, shallots, garlic, chili, and sugar into a blender to grind.

- Next, put the ground lemongrass, shallots, and garlic into a bowl. Add 4 tablespoons of fish sauce, 4 tablespoons of chili sauce, 2 tablespoons of sugar, 2 tablespoons of chili powder, and lime juice, then stir well.
Step 4: Make Thai Shrimp
Evenly pour the Thai sauce over the shrimp arranged earlier. You can add a bit of cilantro on top for decoration.

5. Choosing and Preparing Delicious Shrimp for the Dish
To make delicious sweet and sour Thai shrimp, you need to know how to choose the right shrimp:
- Choose shrimp with transparent shells, and those that jump are fresh live ones.
- Avoid shrimp that feel slimy when touched and have soft, mushy flesh.
- The heads of fresh shrimp are usually firmly attached to the body, slightly curved, and the flesh is firm.
- For a more enticing dish, choose larger, meatier, and firmer tiger shrimp.
Note when preparing shrimp:
- As this is a raw salad, it's crucial to clean the shrimp thoroughly. Remove all dirt from the shrimp head and back. Wash the shrimp with clean water several times.
- To eliminate any fishy smell, you can use alcohol, ginger, beer, etc. before marinating the shrimp with salted lime water in step 1.
- Furthermore, Thai Shrimp Salad is a raw dish that should be consumed immediately and not left overnight to avoid stomach discomfort.
