Congee is a widely loved dish in Vietnam. However, homemakers often shy away from making it at home, thinking it requires intricate ingredients and time. Ingredients for cooking congee:
(Serving for 4)
- Sticky rice: 1/3 small bowl
- Brown rice: ½ small bowl
- Bone marrow/ bone chunks: 300 grams
- Pork heart, tripe, young intestines, liver, pork spleen: 500 grams
- Frozen blood cubes: 200 grams
- Allium fistulosum: 1 cluster
- Ginger: 1 root
- Herbs
- Lime, chili (optional)
- Seasonings: salt, MSG, pepper, fish sauce, vinegar
How to Cook Heart Congee:
Step 1:
- Mix glutinous rice and brown rice, then soak in water for about 1 - 2 hours for the rice to expand.

- Clean the bones, cut into large pieces, then put in a pot, pour water to cover the bones, and start simmering to extract the broth. Add a teaspoon of salt and a little MSG to the pot, simmer for about 1 hour, then turn off the heat. During boiling, remember to skim off any impurities to ensure clarity of the broth.
Step 2:
- Scrape off the ginger skin, crush it. Peel the dry onions, finely chop. Clean the spring onions, wash them thoroughly, and chop finely. Pick the young shoots of herbs, wash them, and let them drain.
- Thoroughly clean the pork heart, use lime juice or vinegar to rub it well to eliminate any unpleasant odor, then rinse it off and let it drain.
- Put the heart, tripe, young intestines, and 1/3 of the chopped ginger in a pot, boil for 20 minutes, then remove the tripe and young intestines. Continue boiling for another 20 minutes until the heart is fully cooked.
- Put the liver and blood in another pot, boil until cooked, then remove and let it cool.
- Slice the liver, blood, heart, tripe, and young intestines into bite-sized pieces.

Step 3:
- Put rice in a large pot, pour the bone broth into the pot, leaving about 3 – 4 times the rice surface, then proceed to simmer the congee over medium heat.
- About 30 minutes into simmering, add the pork heart, blood, and liver to the pot, continue boiling for about 15 minutes. After that, add ginger, green onions, herbs, fish sauce, pepper, MSG to the pot, stir well, season to taste, then turn off the heat.

- Serve the congee in a large bowl, sprinkle a bit of pepper on top, garnish with finely chopped green onions and herbs, add bean sprouts, herbs, lime, and fresh chili if desired.
