Every birthday, our gatherings either featured hot pot or buffet, becoming a bit monotonous. This year, our group decided to break the routine and headed to SOHO Garden on Pho Duc Chinh Street for an alfresco grilling experience, adding a fresh twist to our celebrations.

Grilling a Feast for the Changing Season
Our group indulged in a variety of grilled dishes and a steaming hotpot to welcome the winter season at SOHO Garden. The standout was the fried corn – a tiny, flavorful delight. Despite nearly 3 hours of outdoor dining (with a strong breeze at SOHO Garden), the corn remained delightfully crunchy till the last bite. Impressed, I had to uncover the secret to making such delicious and long-lasting fried corn.

Crunchy and sweet fried corn that stays crispy till the last kernel.
Prepare the ingredients:
Choose sweet corn (preferably plain, plump kernels, evenly distributed)
White chicken egg whites (if small eggs, prepare 2, if large eggs, 1 is enough)
Mix cornstarch and crispy frying flour evenly, in a 1:1 ratio, along with butter, cooking oil, and spices
First, wash and separate the corn kernels, then put them in boiling water with a pinch of salt for about 2 minutes. Drain the corn and let it dry.

Prepare the corn
Separate the egg whites, pour them onto the corn, and mix until each kernel is evenly coated. Then add the flour mixture, stirring until each corn kernel is uniformly coated with a layer of flour and no longer sticks together. Stop mixing and sieve the excess flour from the corn.
Pour cooking oil into a pan, estimate enough oil to submerge the corn when frying. Wait for the oil to heat up before gently adding the corn. Use chopsticks to turn the corn gently for even cooking until it turns golden brown.
Once the corn is golden brown and evenly cooked, add a piece of plant-based butter to the pan, stir well. This way, the fried corn will be much more aromatic and flavorful without being overwhelming.
Gently scoop out the corn, allowing excess oil to drain. Mix it up with a dash of spicy chili sauce or tomato sauce!
