Hence, the primary ingredient for crafting this Mì Quảng is rice flour. In the old days, before the advent of grinding machines, people had to manually grind the rice, a laborious process. The rice had to be soaked in water for a continuous 4 hours to soften before being ground. The ratio of water to the ground rice had to be precise to ensure that the rice sheets, when coated, are neither too wet nor too dry, resulting in an enticing dish.

When making the rice sheets, a pot of boiling water is raised to emit steam, and a cloth is stretched over the pot opening. Once the water is steaming, small portions of the rice batter are poured onto the cloth, forming round sheets. After steaming the batter until cooked, a flat spatula is used to lift the rice sheets off the cloth, placing them on a flat surface and coating them with peanut oil.


Mì Quảng becomes even more intriguing when you discover the myriad variations in its ingredients. Cooks can use chicken, fish, pork, shrimp, crab, quail eggs, beef, snakehead fish, loach, duck, or even frog during the rainy season. Therefore, Mì Quảng is a dish that breaks free from the constraints of traditional recipes, allowing for the combination of various ingredients while preserving its inherent flavors.
