When it comes to delicious dishes that our family adores at Al Fresco's, the first one that comes to mind is probably the tomato sauce chicken. This dish is a favorite of our kids, even though they're not usually big fans of chicken. Perhaps it's because the tender chicken meat is coated with a fragrant, rich tomato sauce, making it much more palatable.

Unlike pizza, you can have tomato sauce chicken every week; it's not like we can visit Al Fresco's every now and then. So, I decided to learn how to make this dish at home. Even though it's not as delicious as the authentic one from Al Fresco's, both my husband and son warmly welcomed it. Whether eaten alone or with rice, hot steamed rice, it's delicious. Maybe one day you can treat your family to try it out!
Guide to making delicious tomato sauce chicken to go with rice
Prepare the ingredients:
+ Chicken meat (breast meat is the best), 2 onions, 370ml boiled chicken broth, 300g canned tomatoes (or fresh tomatoes, peeled and sautéed for sauce), garlic, 2 teaspoons dried parsley, half a teaspoon dried oregano leaves
+ 4 tablespoons olive oil, half a tablespoon of butter, garlic, pepper, salt
Cut the chicken meat into 5cm long pieces. Peel the garlic and slice thinly. Chop the onions finely.
Heat olive oil in a pan, add onions and sauté until soft, then add garlic and sauté for about 30 seconds to 1 minute. Add the chicken and cook until it starts to firm up, season with pepper and salt to taste.

Choose chicken breast meat for better flavor
Cook until the chicken turns white, then add canned tomatoes (or homemade tomato sauce), stir well to let the sauce soak and blend evenly with the chicken, onions, and garlic.
Add parsley, oregano leaves, stir well and add butter, mix to let it soak evenly. Finally, add boiled chicken broth, bring to a boil, then reduce heat, simmer for about 15 minutes until the chicken is tender and soaked in flavorful sauce.
