Don, a species related to clams, is quite common and only found in the Tra and Ve rivers of Quang Ngai. It's a refreshing delicacy, especially enjoyed on hot summer days. After being carefully harvested, don is soaked and cleaned to remove any impurities, then boiled in hot water and stirred to make them open their mouths. Finally, they are cleaned again to extract the flesh. The most popular way to enjoy don is to eat it with fresh rice paper, accompanied by boiled dom broth seasoned to taste, and with various Quang spices such as sliced Ly Son garlic, spicy chili, a bit of pepper, fragrant scallions, and finally, small pieces of grilled rice paper sprinkled on top. For the authentic taste of Quang Ngai don, one must visit Tuy Hoa commune, Tu Nghia district.

It would be a mistake to overlook the snails of Quang Ngai locals, with the spicy taste of chili, the fragrance of lemongrass, and galangal. Unlike the common preparation in the North, here, the snails are cleaned, tail-clipped, marinated with various spices, and then steamed instead of boiled. This method ensures that the spices penetrate deeply into each snail. People in Quang Ngai don't use toothpicks or anything else to eat snails; they directly bring the snail to their mouths, sucking and savoring the full taste lingering inside the shell. The name 'suction snail' originates from this unique eating style.
