
• 400g of fresh beef
• 300g of mushrooms (white button mushrooms or shiitake mushrooms, sliced)
• 3 slices of ginger
• 2 cloves of garlic (sliced)
• 2 stalks of green onions (cut into 5-6cm long pieces, separating the white and green parts)
• 1½ tablespoons of Thiệu Hưng rice wine
• 3 tablespoons of cornstarch (dissolved in 3 tablespoons of water)
For marinating the beef:
• 1 tablespoon water, 1 teaspoon cornstarch, 1 teaspoon vegetable oil, 2 teaspoons oyster sauce, ¼ teaspoon baking soda
For the sauce:
• 2½ cups beef broth, 2 tablespoons soy sauce, 2 tablespoons oyster sauce, ½ tablespoon sesame oil, ½ tablespoon salt, ¼ tablespoon sugar, and 1/8 teaspoon white pepper.

Step 1. Prepare the beef
Thinly slice the beef and marinate with the seasoning mixture above. Mix well and let it marinate for about 10 minutes


Step 2. Prepare the sauce
Combine the sauce ingredients together and stir until dissolved.
You can make extra sauce and store it in the fridge to use for other stir-fries.

Step 3. Stir-fry the ingredients
Heat the pan and add 2 tablespoons of oil around the edge. Add the beef.

Stir well for about 1 minute, then return the beef to the bowl.

Set the heat to medium, add 1 tablespoon of oil to the pan, add ginger, the white part of the green onions, and garlic, and sauté until fragrant.

Add the mushrooms and stir-fry for about 15 seconds, then add Thiệu Hưng rice wine around the edge of the pan to deglaze and stir-fry everything for 20 seconds.


Add the sauce to the pan, reduce the heat, and occasionally stir to deglaze the pan and heat up the sauce.

As the mixture starts bubbling with excitement, add the beef and remaining scallions. Stir-fry everything to blend.


Gradually pour the cornstarch mixture, stirring until the sauce thickens. Within 10 seconds, you'll witness the sauce reaching desired thickness. Turn off the heat promptly.


Step 4. Presentation
To enjoy, scoop cooked white rice onto a plate and top it with the stir-fried beef and mushrooms.
